In a bakery, raw materials aren't just 'goods in storage', they're money not yet turned into bread. Flour Rp 14,000/kg, butter Rp 95,000/kg, eggs Rp 32,000/kg. A small miscalculation immediately eats your margin. Here's how to manage them precisely.

1. Record in the Smallest Sensible Unit

Don't log flour in 'sacks'. Log in kg, even grams if your recipe is precise. Eggs per piece, not per 'box'. The more granular, the more accurate your COGS report.

2. Link Stock to Standard Recipes

This is the core of a bakery-specific POS. When the cashier sells 1 croissant, the system auto-deducts 55g flour + 30g butter + 5g egg from inventory. No manual math, the system does it.

Without integrated recipes, your raw-material stock is a guess. With standard recipes, it's real-time fact you can check from your phone anytime.

3. Set Minimum-Stock Alerts

  • Wheat flour: minimum 20 kg (below this = order from supplier)
  • Roll-in butter: minimum 5 kg (expensive, never let it run out)
  • Instant yeast: minimum 1 kg (expires fast, don't overstock)
  • System sends automatic notification to owner's phone

4. Weekly, Not Monthly, Stock Count

Bakery raw materials shrink easily (open packaging, steam, spills). Monthly counts delay discrepancy detection until losses grow. With an integrated system, weekly counts take just 15 minutes because data is already on screen.

5. Real-Time Reports for Fast Decisions

Successful bakery owners aren't the smartest at math, they're the fastest to know when ingredients run low. Real-time stock reports in your POS enable buying decisions before the kitchen stalls, not after.

Good raw-material management is the foundation of every other strategy, from pricing, to discounts, to expansion. Start with per-gram precision today.
